Ice Cream Party Pie

  • No-bake peanut butter and cereal crust is quick to prepare.
  • Recipe features 2 cups Rice Krispies®, Cocoa Krispies®, or both.
  • Uses 1/2 cup strawberry jam and 1 quart softened strawberry ice cream.
  • Chill and freeze for a total of 120 minutes before serving.
  • Switch up with vanilla or chocolate ice cream for variety.

Mix peanut butter and corn syrup, then add 2 cups Rice Krispies® or Cocoa Krispies® for a quick crust. Press mixture into a 9-inch pan and chill until set. Spread with strawberry jam and soften 1 quart of strawberry ice cream across the crust. Freeze for 120 minutes. Swirl more jam on top right before serving. Slice for 8 servings. Swap ice cream flavors for your favorite twist.

  • 1/3 cuppeanut butter
  • 1/3 cuplight corn syrup
  • 2 cupsKellogg's® Rice Krispies® cereal
  • OR
  • 2 cupsKellogg's® Cocoa Krispies® cereal
  • 1/2 cupstrawberry jam or preserves
  • 1 quartstrawberry ice cream, slightly softened

Directions

1. In medium mixing bowl, combine peanut butter and corn syrup. Add KELLOGG'S® RICE KRISPIES® cereal. Mix until well coated. With back of spoon, press and shape mixture evenly in bottom and on side of 9-inch pan coated with cooking spray, to form crust. Chill until firm. 2. Spread 1/4 cup of the jam over chilled crust. Spoon softened ice cream over jam. Freeze until firm. Swirl the remaining 1/4 cup jam over top of frozen pie. Serve frozen. Note - To cut pie easily, place hot wet towel under bottom and around sides of pan. - Allow to stand a few minutes. - Vanilla or chocolate ice cream may be substituted for the strawberry ice cream.
